Jackson became a personal trainer, as well as owned a food truck, Caribbean Grill, in Houston, after retiring from football, Jackson. In 2013, he participated in Season 4 of the reality cooking competition show MasterChef, finishing in 7th place. Then he played with the Miami Dolphins during the 2005 and 2006 seasons, ending his last year on injured reserve after tearing his anterior cruciate ligament in a game on December 25. Owing in part to his injuries, The Dolphins did not offer Jackson a contract as a restricted free agent.
On March 19, 2007, he signed a two-year contract with the New England Patriots. The Patriots released him, in 2007. During the 2008 offseason, The Washington Commanders signed Jackson, but he was released on June 5. After his retirement from football in 2008, he took on to pursue a career in the food industry.
