Coffee-ancho rub
2 cinnamon sticks (about 2 1/2 inches long)
2 tablespoons sweet paprika
1 tablespoon cumin seeds
2 whole star anise
2 tablespoons ground coffee beans
1 tablespoon cayenne
1 tablespoon cloves
1 ancho chili
2 tablespoons chili powder
4 tablespoons salt
Place cinnamon sticks in a towel and cover. Use the back of a knife or edge of heavy skillet to pound into smaller pieces. Put broken cinnamon sticks and remaining ingredients into the bowl of a food processor fitted with a steel blade. Cover and pulse a few times, then process until mixture is combined and the texture of coffee grounds, about 45 seconds.
Makes about 1 cup or about 2 tablespoons for each filet. Store the rub in a tightly sealed jar.
